How come sometimes when picking two cards in three increments I won't be able to see one or both of the other players cards that round. It will show what I suppose is the back of the card. Does this mean the opponent can't see my cards sometimes as well? I feel like whatever the trick to this is not knowing it puts me at a major disadvantage because I win most battles that this issue does not surface. Thanks.

Those are always trigger cards. Units and spells will always show triggers face down. These are surprise cards mostly traps that keep everyone guessing. If you play a trigger card it will also be face down as well.
